Stuffed Chicken & Baked Apples

 

Stuffed Chicken:

4 large chicken breast, cut slits in side of each for filling.

 

Filling:

½ of one Red delicious apple, finely chopped.

4 oz shredded Munster cheese

– Fill each breast with mixture put one peace of bacon around each piece and pin with toothpicks. Sear both sides of stuffed chicken, top with butter and remaining filling. Place in preheated 375 oven for 30min.

 

Sauce:

In blender combine the following;

½ of one apple with peel, if apple is tart, add 2 TBLS sugar

½ cup buttermilk

½ cup sour cream

4 oz cream cheese

4 oz Munster cheese

Salt and pepper to taste. Heat on low for 10 min, pour over hot chicken

 

Baked Apples:

4 Large Red Apples, cored and slightly hollowed out

½ cup oats

½ cup brown sugar

4 tsp. butter

Cinnamon to taste

8 large marshmallows

 

Place in oven at 375 for 45 min or until done.
