French Classic Tomato Cream Soup & Shrimp Bisque

Class: French Classic Tomato-based Cream Soup, Shrimp Bisque
Instructor: Chef David Ross – He’s a Food Writer and Cooking Teacher and has presented on radio and TV. He represented Spokane and the Pacific NW on “Master-Chef USA on PBS,” (the first “reality” show with a cooking theme), rising to one of the top three Amateur Cooks in America.
Description: We’ll be making a French classic tomato-based cream soup, Shrimp Bisque, a warming dish as we enter into the colder temps of Fall. We’ll go through each step, starting with cooking shrimp shells with aromatics, white wine and fish stock. Then we’ll demonstrate reducing the bisque to concentrate the flavors and adding tomato and cream. We’ll garnish the soup with classic croutons and shrimp. To accompany the shrimp bisque, we’ll learn how to make a classic French “rouille”, a garlicky blend of roasted red peppers, saffron and paprika to spread on grilled bread and dip into the creamy shrimp bisque. Then we’ll show the versatility of Shrimp Bisque by using it as the base of a sauce for Seafood Pasta. The pasta dish feeds a family and is perfect for the Holidays.
